Do you make chocolate from scratch?
We do not make chocolate, we make chocolates. We buy chocolate in bulk from a company in France called Valrhona. We melt it and then thoughtfully combine it with other luscious ingredients to make the confections we offer to you.
What is ganache?
Ganache—rhymes with "the posh"—is the dense, creamy, chocolate filling inside our chocolates. Made by stirring together chocolate, cream, and butter, it requires an exactitude of timing, temperature and proportion to achieve its smooth, melt-in-your-mouth quality.
What does the percentage on a chocolate label mean?
Dark chocolate is typically labeled this way. The percentage refers to the portion of the chocolate's ingredients that come from the cocoa bean. If a bar of chocolate is marked 70%, then 70% of the ingredients are from the cocoa bean and most of the remainder is sugar, along with about 1% vanilla, and 1% soy lecithin as an emulsifier. (Milk chocolate will also contain dairy.) The higher the percentage, the less sweet the chocolate, though no two chocolates of the same percentage are exactly alike. The seed variety of the cocoa bean, the soil, the climate, and the care during growth and processing influence the flavor of the cocoa beans and thus the chocolate that's created.
Do you offer milk chocolate?
We use only dark chocolate. However, the chocolate we use most is very mild, far more sweet than bitter. Many people who've said they don't like dark chocolate have tried ours and been surprised to find they love it. The chocolate we use is widely considered to be some of the best in the world and that makes all the difference.
Do you offer vegan, dairy-free, and/or gluten-free, peanut-free confections?

With regard to allergens, everything we make is produced in a kitchen that processes wheat, peanuts, tree nuts, milk and soy.

Do you use organic or fair trade ingredients?
We always use organic cream and butter in our ganache. It tastes best that way.
The chocolate we use is not organic or fair trade. Why? Like wine, chocolate is a processed food, and the art of that processing is essential to the final flavor and mouth-feel, essential to the reasons we enjoy chocolate. We use chocolate from Valrhona, a company in France that's been making chocolate for nearly a century. It's extraordinary chocolate that happens not to be organic.

How do we decide what to use? If an ingredient is certified organic and tastes better than it's non-organic counterpart we use it. Our standard for flavor is higher than our standard for organic.
