An exquisite orangette requires expertly candied orange peel, and ours has a lofty provenance. Navel oranges grown in sunny Spain are hand-peeled, cut and candied at a small, specialty pastry house on the French Riviera. Using traditional, time-consuming methods, the fruit's intrinsic perfume and flavor are fully captured and preserved.
In our kitchen, the candied strips are dusted in superfine sugar and dressed in 70% dark chocolate.
